INGREDIENTS:
– 1 box angel hair pasta
– 2 bags of multicolor sweet peppers
– 1 red onion
– fine sea salt
– olive oil
– 1-2 cups freshly chopped spinach
– 1 small carton of cherry or grape tomatoes (multicolor if desired)
DIRECTIONS:
1. Cut off tops of sweet peppers & de-seed. Cut each pepper into 4-6 pieces.
2. Cut red onion into similarly sized pieces.
3. Put veggies in a large bowl & toss in olive oil, then place on large baking sheet covered in foil in 1 layer OR place on baking sheet first and then apply olive oil.
4. Sprinkle with fine sea salt.
5. Bake at 425 for 25 min, or until the edges are crispy.
6. Boil a pot of water & prepare the angel hair pasta noodles according to package directions.
7. After cooking the noodles, place them in a casserole dish.
8. Add roasted veggies & chopped spinach.
9. Cut cherry tomatoes into halves or quarters and add to the dish.
10. Toss ingredients with tongs until well-mixed.
11. Add salt to taste & serve.
12. You can add diced avocados if desired.
